Beet Juice Vinaigrette

  • Food Processor


  • 1 small Beet Peeled and cut into small chunks
  • 1 tbsp Honey
  • 2 cloves Garlic
  • 2 tsp Apple Cider Vinegar Preferably organic
  • ½ cup Pickled beet juice
  • Juice of ½ lemon
  • ½ cup Olive Oil
  • Salt


  • Put all the ingredients in a food processor and puree until smooth. Adjust the seasonings as needed and serve cold over a fresh salad.
