Ingredients
  

  • 1 cup raw beets, peeled and grated
  • 2 cups 100 % organic shredded coconut unsweetened Recommended Brand: Let's Do
  • 8 dates (fresh Medjool with pits removed) Recommended Brand: Natural Delights
  • 1 tbsp vanilla extract
  • 1 tsp sea salt fine crystals Recommended Brand: Trader Joe's
  • 3 tbsp all-natural cacao powder unsweetened Recommended Brand: Chatfeld's

Instructions
 

  • Add all ingredients to a food processor and pulse until combined
  • Scoop and roll about 1 tablespoon of the mixture into 16 balls
  • Roll the ball in extra cacao powder or coconut (or both) to lightly coat
  • Place into an airtight container and store in the refrigerator or freeze
